Cornicabra belongs to the D.O.P. Montes de Toledo and is our native variety in the Castilla la Mancha region. Very rich in polyphenols, this olive provides a green-golden oil of great character. Remarkably spicy and bitter, with green aromatic notes of salad leaves, almond and green apple. Ideal over vegetables such as artichokes, aubergine, courgettes and tomatoes. Add generously to your favorite pasta, pizza, potatoes and rice dishes.
